Here's a receipe for Garlic Scampi that uses tequila instead of the usual wine or sherry.
3 tbp chicken broth, defatted
3 tbp tequila
1 1/2 tbp of olive oil
1/2 teaspoon of salt
1/2 teaspoon oregano
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 cloves of minced garlic
1 1/2 lbs. of peeled jumbo shrimp
2 lemons cut into wedges
In a large bowl stir in all the ingredients minus the lemons and shrimp. Once ingredients are well blended add shrimp making sure they are well coated with mixture. Leave to marinate in refrigerator for one hour.
Place shrimp on skewers leaving a small space in between.Brush shrimp with marinade mixture then place within broiler making sure there's no more than 4 inches from the heat source for 2 minutes, then turn them. Brush again with marinade and broil for another 2 minutes or until shrimp has lost it's pinkness. Serve over a bed of whole grain rice.Hmmmm delicioso!
Be care as to not over-marinade or overcook shrimp either way they will be tough in texture.
