Syrian Jhibna

Syrian Jhibna
1 lb. spinach (chopped)
1 onion
1 8-oz. block of cheese (can be cheddar, mozzarella, jack, any that you like and melts well)
2-3 eggs beat
3 chicken breasts cut into strips
salf and pepper to taste
tablespoon of Tabasco* optional

Dice the onion and saute it till it's clarified. Cook the spinach (steam or boil), grate the cheese. Combine all ingredients including chicken strips with the beat eggs then pour into greased loaf pan and cook at 350 degrees for 30 minutes (more or less). One surefire way of knowing if the casserole is done is to insert a toothpick into the middle to see if it's still gooey, if not it's done.

A great meal for the picky or diffiuclt child!! Wonderful meal for any time of day!
